Sanjeev Kapoor's eggless cake recipes

Sanjeev Kapoor was arguably the first celebrity chef from India. His show Khana Khazana opened the Indian palette to new cuisines and new dishes while giving them a desi twist. As he turns 56 today, we could all use a little help from Sanjeev Kapoor once again. He was famous for making cakes without eggs and sometimes without an oven too! Here are two cake recipes that you can make at home and perfect your baking skills until your neighbourhood bakery opens its doors once again.

1. Eggless Chocolate Cake

Egg is considered an absolute essential while making cake, until Sanjeev Kapoor made an eggless chocolate cake. Here’s how you can make this cake at home in a microwave oven.

100 grams dark chocolate (grated)
1 cup butter
1 1/4 cup maida
2 teaspoons baking powder
1 cup powdered sugar
1 teaspoon vanilla essence
3/4 cup milk
1/2 cup walnuts (chopped)
Oil or butter for greasing

Process: Melt butter and dark chocolate in a bowl by heating it in a microwave. In another bowl, mix flour and baking powder and add this mixture to the melted chocolate and butter. Add the sugar and vanilla essence to this mix. Pour the milk into the bowl and stir well. Lastly add the walnuts in the mix and pour the mix in a greased microwave proof dish. Use can use oil or butter to grease the insides of the dish. Bake it in a microwave over at 180 degree celsius for 25 to 30 minutes before serving.

2. Zesty Lemon Cake

This Zesty Lemon Cake can be made without using egg. You won’t even need a microwave oven for this one if you have a pressure cooker.

1 lemon skin (grated)
3 tablespoons lemon juice
2 cups maida
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup butter
1/2 cup powdered sugar
1 1/4 cup yogurt

Process: Mix baking soda and baking powder in a bowl with maida. In a separate bowl, cream together powdered sugar and butter. add yogurt, grated lemon peel, and lemon juice to the sugar and butter. Add the flour mixture to the butter and mix well. Grease a tin utensil with butter or oil and add the cake batter to it. Heat a pressure cooker with water and add a base to it. Place the tin utensil with the batter on top of the base and close the lid of the cooker. Let it steam for 45 minutes while you prepare the topping. Melt 3 tablespoons of sugar in water till the sugar fully dissolves. Add lemon to it and pour this mixture over the cake once it is baked and ready to serve.
