Kashaya Drink 

Kashaya improves digestive enzymes, reduces nausea and helps maintain blood pressure. It also removes excess heat in the body and is the most preferred drink if you have a cold. It also supports the function of the kidneys and healthy urination. Here’s how you can make it. Roast coriander seeds, cumin seeds, black peppercorns and fennel seeds until fragrance comes out. Now add cloves and cardamom and roast it on low flame for a couple of minutes and allow them to cool. Crush dry ginger and transfer roasted spices and blend together. Finally, add turmeric powder and grind them to a powder. Store kashaya powder in an airtight container. In a pan bring water to boil. Add kashaya powder and jaggery, let it boil for a couple of minutes. Add milk and brew it and enjoy!

Coconut Milk Palao 

Take a cooker and heat 2 spoons oil and saute 1 spoon of cumin, 2 pods cardamom, 1 inch cinnamon stick, 4 cloves, ½ spoon of fennel along with 1 bay leaf. Add 12 cashews and roast to golden brown. Then add 1 onion, 1 spoon of ginger garlic paste and saute until it is cooked. Add 1 carrot, 5 beans and 2 spoons of peas. Saute for a minute without overcooking veggies. Now add 2 cups of coconut milk and mix well and add 1 cup of basmati rice and ½ spoon salt. Cover and pressure cook the rice. Once it is cooked, add coriander leaves and mix well.
