Powder cashews at room temperature by using a mixie. Wipe the sides & bottom of the jar every time while grinding. Use pulse option if needed. Keep the food colour and the ghee greased plate ready. Then, take a vessel and add sugar. Keep it covered with water. Heat till it becomes more consistent. Now add the cashew powder immediately and keep the flame low. Stir continuously till it leaves the sides and becomes a thick dough. Now put the cashew dough in the greased plate and divide the dough into two parts using a spoon. Add a few drops of food colour in the dough and mix it with a spoon. Make all the balls, cover it and give a set time of 30 minutes. Now, using a sharp knife cut the ball to make a flower shape. Your Kaju lotus is ready!
Firstly, take a saucepan and boil 4 cups water, 1 spoon oil and ½ spoon salt. Once the water comes to a boil add in 2 cups of rice vermicelli. Boil the same for 2 minutes and make sure it is cooked well. Drain off the vermicelli and let it cool completely. Then, take a large kadai and heat 2 spoons of oil and roast 2 spoons of peanuts until it turns crunchy. Roast 2 spoons of cashew until it turns golden brown. Keep the same aside. In the same oil, add 1 spoon mustard, chana dal, urad dal and few curry leaves along with chilli and ginger. Add 1 onion and saute until it softens well along with ¼ spoon turmeric and ½ spoon salt. Now, add the same in boiled vermicelli and mix gently. Your dish is ready.
