1. Dimer Do Pyaza

For Dimer Do Pyaza, marinate some boiled eggs with salt and turmeric powder. Heat mustard oil in a pan, and lightly fry the eggs and keep aside. In the same oil, fry chopped onions, grated garlic and ginger paste. Add salt to taste, turmeric powder, cumin powder and red chilli powder and stir well. Add the eggs, some garam masala powder and a pinch of sugar. Cook till the oil starts to separate, and then serve while hot!

2. Egg Paneer Tikia

In a mixing bowl, add grated paneer, mashed duck egg, garlic and onion paste, salt and sugar to taste, chopped green and red chillies, lemon juice, cornflour, tomato and soy sauce. Mix well together. Shape into patties and fry in refined oil, then keep aside. To the same oil, add ginger paste, chopped garlic, diced onions, capsicum, tomato, soy and chilli sauce, salt, and stir. Add the egg paneer patties and serve with whole chillies on the side.

3. Dimer Bharta

Heat some oil in a frying pan. Add onion paste and fry for a few minutes. Then, put in some ginger and garlic paste, tomato sauce, tomato puree and a bit of water and saute. Add chicken masala, fenugreek powder, cumin powder, milk, salt and sugar. Stir together and then add sliced hard boiled eggs. Saute some more, add some ghee, and serve hot!

4. Egg Pasanda

Heat refined oil in a frying pan and add chopped onions, green chilli, tomatoes and curry leaves. Saute together and then add turmeric powder, red chilli powder, garam masala powder, salt, ground pepper and sugar, and keep cooking. Next, add beaten and seasoned eggs and stir together till cooked. Garnish with chopped coriander leaves and enjoy!

5. Nawabi Egg Korma

Make slits in four hard-boiled duck eggs, and marinate with turmeric powder and salt. Heat refined oil in a pan, fry the eggs till golden brown and keep aside. Add some more oil to the pan, cinnamon, cardamom and cloves and fry. Then, add onion, garlic and ginger paste, turmeric powder, red chilli powder and cumin and coriander powder, cashew nut paste, whipped plain curd, split green chillies and mix.

Next, add the fried and boiled eggs, salt to taste, milk, fried onions and cover the pan and cook on a low flame for a while. Add garam masala powder and a dollop of ghee and cook till the Korma is ready! Garnish with fried onions and relish.
