Kanda Bhajia

To make Kanda Bhajia you will need 1 bowl sliced onions, 1 cup gram flour, salt to taste, oil for deep frying, 2 tsp red chilli powder, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp carom seeds, 2 tbsp coriander leaves, 3 tbsp rice flour, 3 green chillies and 1 tsp chaat masala.

To begin with, take a bowl and add 1 bowl sliced onion, salt and mix well. Keep it aside for 10 to 15 minutes. Take a kadai and heat oil enough for deep frying. Next, add 2 tsp chilli powder, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin powder, chopped coriander and mix it well. Add gram flour and rice flour and mix it well. Take small portions of the onion mixture and deep fry them in oil. Once they turn golden brown move them to the serving plate and drain the oil using tissue papers. Lastly, sprinkle some chaat masala and serve them hot.

Khaman Dhokla

To make Khaman Dhokla you will need, 2 cups gram flour, 1 cup yoghurt, salt to taste, 1 tsp turmeric powder, 1 tsp green chilly ginger paste, 2 tbsp oil, 1 tbsp lemon juice, 1 tsp soda bicarbonate, 1 tsp mustard seeds, 2 tbsps coriander leaves and 1/2 cup grated coconut.

To begin with, take a bowl and add 2 cups gram flour, 1 cup yoghurt, 1 cup warm water and salt and mix it nicely. Keep the batter aside for three to four hours to ferment. Once it is fermented, add 1 tsp turmeric powder, 1 tsp green chilly ginger paste and mix. Take another small bowl and add 1 tbsp lemon juice, soda bicarbonate, 1 tsp oil and mix. Add it to the batter and whisk it. Heat the steamer and grease the tray. Pour the batter on the tray and place it in the steamer. Cover the steamer with the lid and let the batter cook for ten minutes. After it cools down a bit, cut it into square pieces and move it to serve plate. To give tadka, take a tadka pan and add 1 tbsp oil and 1 tsp mustard seeds. When the seeds begin to crackle, pour it over the Dhokla’s. Garnish the dhokla’s with coriander leaves and grated coconut.

 

 

Cardamom Cake

To make Cardamom Cake you will need, 1 tsp Green Cardamom powder, 2 cups wheat flour, 3 eggs, half cup of sugar, 1 tsp Vanilla essence, half tsp baking powder and 2 tbsp butter.

To begin with, take a bowl and add 3 eggs, 1 tsp vanilla essence and 1/2 cup sugar. Whisk all the ingredients well. Take another bowl and sieve 2 cups wheat flour, 1/2 baking powder and 1 tsp cardamom powder. Next, preheat the oven at 180 degrees. Add the wheat flour mix into the egg mixture. Take 2 tbsp butter, melt it and add to the mix. Now grease the cake tray and pour the mixture in it. Bake it in the preheated oven for 25 minutes. Once done, remove the cake, cut the slices and serve.

 

Boote Ke Samose

To make Boote Ke Samose you will need, 4 tbsps whole green gram soaked, 3 cups flour dough, Oil, Salts to taste, 1 1/2 tbsp green chilli paste and 1 tbsp lemon juice.

To start with, take a frying pan and heat 1 tbsp oil. Add green chilli paste and sauté for 2 minutes. Add 4 tbsp green gram and half cup water and stir. Once the mixture is dry, add 1 tbsp lemon juice and mix. Now, divide the dough into four equal parts and roll them in the shape of a puri. Cut the puri’s in the centre and make a cone. Stuff the green gram mixture in the cone and seal it using water. Take a kadai and heat oil enough deep frying the samosas. Add the samosa in the kadai one by one and fry them till they turn golden brown. Move out the samosa’s and dry them using tissue paper.

Green Peas Potlis

To make Green Peas Potli‘s you will need, 2 cups Wheat flour, salt to taste, 2 tbsp Ghee, 1 cup crushed green peas, Oil, 1 medium onion chopped, 1 tsp red chilli powder, 1/2 tsp garam masala powder, 2 tbsp chopped coriander leaves and 1 cup grated cheese.

To start with, take a frying pan and heat 2 tbsp oil. Add chopped onion and sauté. Next, add 1 cup crushed peas and salt and sauté. Add 1/2 tsp garam masala powder and 1 tsp red chilli powder. Transfer the mixture to a plate and add finely chopped coriander leaves and keep aside. Take a bowl and add 2 cups wheat flour, salt, water and make a stiff dough. Divide the dough into 12 equal balls. Now roll the balls like puri and apply water on them. Place the stuffing in the centre of the puri. Add grated cheese and gather the puri with pleats. Twist the top slightly and make a potli. Similarly, make other potlis. Deep fry them in oil and wait till they get golden brown. Once done, take them out in a serving plate and drain the excess oil using tissue paper. Serve the dish with ketchup or green chutney.
