Monday Motivation: Niharika Konidela’s Healthy Watermelon Feta Salad Will Fix Your Day

Niharika Konidela has introduced us to the yummy and healthy Watermelon Feta Salad for breakfast. And we’re totally digging it. You should try it too

Your first meal of the day a.k.a your breakfast should be king-sized, they say. The good old books of Ayurveda however suggest that your first meal shouldn’t be too heavy. In such a dispute, what do we do? Well, Niharika Konidela has come to our rescue. We have our complete faith in Niharika, who is an out-and-out foodie and lover of all things edible. And my friend, she would totally go for a Watermelon Feta Salad for breakfast.

Earlier, on her Instagram stories, Niharika shared a picture of a bowl full of the classic and colourful Watermelon Feta Salad. She wrote, “Hello, breakfast” with a drooling face. To be honest, all of us will drool while looking at this red, white and green goodness.

Now that we have taken a good look at it. Let’s take a proactive step towards being in the best of our health so that we can munch on our favourite guilty pleasure later in the day.

Here’s what you will need to prepare this salad: watermelon cut in cubes, some feta cheese, some fresh mint leaves, a handful of arugula leaves and lemon zest to add additional a citrusy kick. Now, for the salad dressing, you will need olive oil, orange juice, honey, salt and pepper and some shallots, if you like.

Start by preparing the dressing. Take a small bowl or container and add some orange juice to it. Now, squeeze half a lemon to it, this will give it a good tangy and citrusy flavour. Add a little honey to this citrus mixture, according to your sweet tooth. If you like onions or shallots, add some now. To finish off the dressing, grind pepper and salt into it. Go easy with the salt since Feta cheese is already salty.

Add the watermelon cubes to a large bowl followed by crumbling some feta cheese on top. Add the arugula and mint leaves at this point and top it all with the dressing. Give it a good stir, plant a couple of mint leaves to give it a good Instagram-worthy finishing.
